A is for Asparagus

For the Blogging from A to Z Challenge for the month of April, I decided on the theme of food.  I don't necessary consider myself a foodie, but I do like good food and I like to cook when I can.

One of my favorite vegetables is asparagus: crisp, green, young tender spears of asparagus = yummy!

My Favorite Roasted Asparagus

1 bunch of asparagus, rinsed with rough ends of stalks cut off
2-3 slices of thick cut bacon, uncooked and chopped/diced
A pinch of Kosher salt, optional
Cooking spray

Spray the bottom of a 7x11 dish with cooking spray (olive oil or vegetable oil spray).  Spread the asparagus in the dish.  Sprinkle the uncooked bacon over the asparagus.  Sprinkle with a pinch of salt.  Cook in a 350 degree oven for 20-40 minutes, depending on how crunchy or mushy you like your vegetables.

Haven't had asparagus more than once or twice, but that's because of where I live. Looking forward to what you come up with for the rest of the month.

I also like asparagus! :) This recipe looks really simple — I should have my mother try it out.

I live in southeast Washington State, where asparagus is just about to come into season and stay for a couple of months. By the time it's gone, I will be sick of asparagus, but between now and then, it will be in EVERYthing. Yum. Love it every which way.

I like that you picked food as your topic. I am not going with a theme for the challenge, but because I love to cook and eat, food tends to come up a lot...

We enjoy 30 min. marinade in EVOO, minced garlic, ground pepper & sea salt grilled, roasted, or pan seared while turning frequently & maintaining crispness. Also quite tasty w/drizzle of balsamic glaze.
